Today is the first full day of my Christmas vacation. I am very lucky that I work in a place that closes down for the holiday (and I still get paid)! So, today I am making Panettone, which is a bread studded with raisins, citron, and candied orange peel. But don’t mistake Panettone for the sometimes dreaded fruitcake! Panettone is light and airy. You bake it in a coffee can and it puffs up high and light. It’s great toasted. It’s great in a bread pudding. It’s just great!
It is a lengthy process, but most of that time is spent waiting for the yeast to rise. So, while I’m making Panettone I can blog. Plus, for me baking takes my mind off of things. Which is good since I just spent a load of money getting my car fixed! Merry Christmas to my mechanic!
The bread is now having it’s last rise before I add the dried fruit. Seriously, you need all day to do this! Once the Panettone is done, I’ll post some picture – if it turns out right!
