I’m not up to par today (feel like I’m coming down with a cold), but I promised The Dude I’d do some cooking. While by standard definition The Dude isn’t a “father,” he has compassionately raised several dogs, a couple of cats and a fish. And as you can tell from earlier posts – our pets are our family. So, as far as my definition goes, he’s a dad!
So, we’ve scoured the cook books and here is today’s menu.
Fattoush salad – loaded with tomato, cucumber, pita bread and a lovely pomegranate dressing; Kibbeh – a mix of lamb, bulgur, pine nuts, onion and spices (Notice the Middle-Eastern theme here?); and to wrap it up, a blackberry cobbler with vanilla ice cream. I picked up some lovely fresh blackberries yesterday (on sale too) and I can’t wait to use them!
The Dude and I absolutely love Middle-Eastern cuisine. One of our favorite restaurants in Michigan City, Indiana is Sahara. The food is always fresh and delicious, and the wait staff are terrific too – always making suggestions and very friendly. And the owner, Moe, is an entrepreneur who knows how to run a restaurant and build community. If you are looking for great Middle-Eastern food, this place rocks.
One of my favorite dishes at Sahara is Kibbeh. Kibbeh is often served as an appetizer, but frankly I can make a meal of it! So, today I’m going to try my hand at making it myself. How do I describe it? It is like a dumpling stuffed with a mixture of lamb, pine nuts and onions, and deep fried, although today I’m going to grill them because I just don’t want to heat up my kitchen with deep frying. And, since I’m going to the nutritionist tomorrow, I’m trying to gear up for healthier cooking and eating.
Kibbeh! It turned out great, although the picture doesn’t do it justice.
I didn’t get a photo of the Fattoush salad, but it was really tasty and pretty too.
Blackberry Cobbler. Trust me, there are a million blackberries in there! Really yummy with vanilla ice cream.
Dinner was great, and now it’s time to kick back and relax. Sunday nights are made for chilling out, having some blackberry cobbler, and watching “The Next Food Network Star” on Food Network. Hmmmm, maybe I need to send them an audition tape next year…
